Where was I this week?

Shame on me! I haven’t posted in a week! There have been so many delicious meals and awesome workouts going on. Not to mention some great wedding planning deals going on!

So, first things first: Meals. PattyCake’s parents invited us over for some authentic middle-eastern kabobs. Holy fantastic. Those things rock my face off; I could eat them every day. And don’t get me started on the crunchy rice. Or the dill/cucumber greek yogurt dipping sauce they serve with everything. It is de.lic.ous. Here’s a stock photo because I was too busy devouring the kabob to stop and take a picture. They need to give me the recipe.Image

That picture doesn’t even do kabobs justice. But trust me they’re great.

Last night I had quite the cooking success though (of course, no pictures). I went to Skinny Taste and found this. And adapted it to include whatever I had in the house.Image

That’s her creation. Yum. I used Soba noodles (japanese buckwheat, very tasty), minced my onions (because I’m a pansy and am still trying to get over the texture issue), cooked it on the magical cast iron, and cut the recipe in half for Patty and me. It turned out delicious. Patty said it didn’t taste like a light recipe, and was packed with flavor. Winning!

I’m still following WeightWatchers, and am down 6.2 pounds so far (yay!), with a realistic scary 12 pounds to go. Hey! I can do it!

Jamie Eason‘s LiveFit Trainer is working really well for me so far as well. I’m on Phase 1 Week 3, and consistently losing. I don’t follow her meal plan because I tend to eat on the healthy side anyway, and I don’t really believe in crash/fad diets. I forgot to take my measurements this morning, but after one week on the program, I lost 3.5 total inches all over my body.

On top of all of that, I also started a C25K trainer. I’m staying with it, it isn’t easy, but I want to get to the point where I can’t wait to go running. I don’t know if it will ever happen, but I didn’t think I would ever enjoy lifting…and now it’s my favorite.

Well, tonight I’m thinking of doing something with beef. We haven’t had red meat in a while. It’s also leg day! I’ll make sure to get some good pictures of both in. You know you love my gym pictures. Here are some from last week:ImageImage

I am a 20 something focused on being a kickass mommy, fiance, cook, and worker-outer. I love everything about cooking (besides desserts, but I'm working on that), and I always try to make everything healthy. I am getting married in May to the absolute love of my life. He is my greatest supporter in everything that I do, and my best friend and joke-provider. I lost a shit ton of weight a few years ago (193 down to 142 in 3 months) by eating healthy and doing P90X. I gained 25 pounds of that back, and am now working to get back down to a healthy weight using Weight Watchers and LiveFit. So far so good! So, read, enjoy, learn something, teach me something, and have fun!
